Chicken Sandwiches with Pesto Aioli

On our recent trip to Savannah, we ate lunch with friends at SoHo and I ordered a chicken pesto aioli panini. It was so. stinking. good. and so simple. We came home and I couldn’t stop talking about it, so we added to our meal plan.

We made basil pesto (basic – basil, pine nuts, olive oil, and parmesan blended together) and added mayo and lemon juice to that to form an aioli.

We sliced 1 bone, skinless chicken breast in half (thought it was too big to eat in one sandwich with all that bread) and sauteed with italian seasoning and olive oil.

The sandwich was topped with spinach, tomato, and freshly sliced parmesan-reggiano cheese and the bread was lightly toasted.

It was divine. Gabe LOVED the aioli and proceeded to eat the rest of it on everything til it was gone! 😉
