I’m back! With a new month of recipes for February. We always get a jump start on our meal planning just because I like to plan! 😉 We are almost completely out of groceries and essentials so we will need to grocery shop for next month this weekend.
You’ll recognize a few of the recipes and can reference my previous meal plan for those. I’m going to post the new ones below!
Meatballs (spaghetti and meatballs is our twist on these – we usually eat them exactly as the recipe is with the homemade sauce and all), Green Chilaquiles, Red Beans and Rice, Baked Sweet Potato Noodles with Balsamic Glaze, Buffalo Cauliflower Bites, Queso Fundido.
For homemade pizza, we use this gluten free crust mix. It’s the BEST! FOR REAL.
The gluten free rolls with lentil soup are these. And again, SO good. We’ve tried lots of gluten free mixes and these are winners.
The Super Bowl clearly has us eating comfort food! We wouldn’t normally indulge that much! 😉 We also just purchased a (used) Primo Oval Jr. 200 so we are incorporating more grilled/smoked meats and veggies this month and hoping the weather is nice enough. Speaking of weather, the meals on specific dates are not set in stone. We will alter the menu based on veggies that might go bad soon (though I try to plan that out in advance – as in kale on the 1st and then use the rest on the 6th) but we also change it based on things that might come up or if the weather isn’t nice enough to grill out.
So far, we’ve still only eaten out twice in January and one time was on someone else’s dollar. I’d call that a success! (Without discussing that grocery bill…..)
